PGI certified, our regional recipe without nitrite and its slow natural smoking, with coniferous wood, gives it its typical color.
It is embossed by hand and made from the best meats from pigs, fed on whey, mainly from Haute-Saône. Once cooked, we first appreciate the beautiful amber color of its dress, its subtle fragrance. When cut, its thick grain, its soft, juicy and tied texture. The absence of nitrite explains its slightly pinkish, pale gray color: a natural color, of cooked meat.
